For one hour, I tried to look for my kitchen twine to secure the chicken to roast it in the Baby George, could not find it; not to mention, that my friend was looking all over for it in my little kitchen, as if she would know where I'm hiding it. The chicken, which was at least three and one half pound or larger, just did not fit the little rotisserie. Could not even find my extra aluminum foil, I thought it was such a disaster, so I ended up roasting it in the oven, first on 425 degrees F. for the first 25 minutes, and 350 degrees, the last 90 minutes, open the entire time, with fresh frozen rosemary tossed into the pan, and cut fresh garlic cloves. I stuffed the chicken with quartered onion, and half a lemon, and rubbed it with dry herb spices, and paprika, and rubbed it with vegetable oil. I also use 1 cup of white wine, for basting. |
