Greek Cucumber Salad

One of my favorite gadgets, the plastic mandoline. Works just like the commercial expensive kind. The adjustable knob also lets you slice even match sticks shape carrots, zucchini, and potato. Sharp like a razor, use caution, not to slice all the way to the end, if you want to keep your finger tip. Goodwill thrift find, $.99. I had this for quite some time used to take it on my private chef jobs and also use it at home . Dishwasher safe. Now that's what I call another bargain...a Foodie's helper.
I love the European cucumber, which you don't have to peel, and the nice fat organic scallion. As you can see poor scallion was almost forgotten in the fridge for about 1 week, and had to cut too much of the ends off, but it was still  fresh, and crispy.
This is the end result with the paper thin sliced cucumbers, and folded in the yummy thick Greek Yogurt, all natural, plain, so that you can use it many ways. I love it with fresh berries folded in, for a nice healthy snack.
This only took a few minutes to prepare, no marinating required, just the yogurt, salt, pepper, fresh or dry dill and a small amount of white or rice vinegar.You don't even have to chill to serve because your yogurt and the veggies already have been chilled.
