Noodle Kugel with Onions and Mushrooms



Noodle Kugel with Onions and Mushrooms

7 or 8 ounces medium egg noodles
3 Tablespoons vegetable oil
2 Tablespoons melted butter
1 large onion, chopped
1 lb. small mushrooms sliced
salt and freshly ground pepper to taste
2 teaspoons Hungarian paprika
2 garlic cloves, minced
2 large eggs, beaten
1 extra egg beaten (for topping)
Preheat oven to 350 degrees. Cook noodles uncovered in a large pot of boiling salted water over high heat about 4 minutes, or until almost al dente. Drain, save about 1/2 cup cooking water. Heat 3 Tablespoons of oil in a large skillet over medium high heat. Add onions, and saute for about 10 minutes till it gets translucent and start to get golden. Add mushrooms, salt, pepper and garlic, 1 teaspoons of paprika, and saute for another 10 minutes or so, until onions get nice and brown, but not burned. By this time, mushroom will get tender. Add the 1/2 cup cooking water, and let it get cooked down a little. Now, add the 2 eggs to the noodles, and mix well. Stir in the mushroom mixture. Spray a 2 quart baking dish casserole with cooking spray, and add the noodle mixture. Spread the remaining beaten egg on top, and sprinkle with the remaining 1 teaspoon paprika.
Bake for about 45 minutes to 1 hour, until nicely set, and slightly crispy on the top. Serves 6

    There's actually a Shop Rite supermarket in NJ that has a kugel bar- all kinds of sweet and savory kugels by the pound. Heaven.
