Just think; you can make these fabulous muffins for breakfast...bacon, lightly scrambled eggs, and shredded cheddar cheese, all rolled into one!
There's about a dozen version of the Bacon-and-Eggs Muffins recipe online, but I found this to be the best, from Better Homes and Gardens Magazine. This is what I call a 'hearty' breakfast, or 'snack'

Hi Everyone! You may be wondering, or not...where I could have been; so unlike me, to disappear for one month and not announce where, or why?...or perhaps what happened to my untimely disappearance, when I have always seemed to share my routine activities on my blog. Well, it hasn't been the best of my last month, being without my family; missing them, terribly...both my 2 children and my 4 grandchildren away on their respective vacations...and me; left behind...a first time, in 12 years!
Also, for the last 2 years, I have stopped celebrating birthdays, anniversaries, and special events, that have been bringing happy memories in my life...the past entire month have been bringing up such 'bittersweet' memories for me...thinking about my past 2 year losses of loved ones I lost; including my 2 beloved cats, Prince and Mush and my son's beautiful Black Lab beloved family dog named Thai...all gone in the last 2 years! We have an old Hungarian tradition, that I remember from childhood, that my grandmother used to make, at least once a week called "túrós tészta (csusza)"...cottage cheese noodles! My mom used to make it, and my aunt, and sister, as well. The only difference is that my mom would make it with homemade noodles, and use fresh "farmers cottage cheese" and farmers sour cream, and real bacon, which could be considered "organic" bacon without "nitrates" added that we could actually buy these days, in Whole Foods Market.
Now, I don't have a step-by-step directions for this delicious and satisfying dish, that you can serve, with or without the crispy bacon bits, if you want it meatless...but oh, my! those organic uncured crispy bacon bits really, really add some extra flavor.
Just recently, I was browsing through some food blogs of friends that I haven't visited for a while, and my eyes
got caught on a simple spicy bean dish...an Indian spicy vegetarian chili that inspired me so much...
knowing that I had all the spices, and it's a Weight Watchers approved dish, as well, plus the fact that I truly love, spicy foods!
When something really inspires me that someone makes, I usually leave a comment saying that "I would love to try this"..."I'm going to make this"..."I'm bookmarking it to print and copy the recipe"...how many of us say these over and over again?...only to just put it aside and forget about it! Nancy, and her husband Veejay are the authors of theKitchen Gypsies, and I mentioned to my friend Nancy, that I would like to make this dish, and I actually did, in my slow cooker...a huge pot of it!
