'Time in a Bottle'...I'm back!

My treasures from the ocean...including a bottom of a 1965 beer bottle; now, a 'sea glass' after 47yrs finding its way out from the ocean!The gorgeous cobalt blue dish with it's stand, is a 'thrift find' for $2.99.

Hi Everyone,
I'm back...not looking so great; but my eye surgery was a success...actually a bit 'scary'. Did not think that Retinal eye surgery would be so complicated...but if you have the faith and confidence, and know you have the best doctor, and surgical team, then half the 'battle' is done! Thank you so much for your kind and encouraging words, your thoughts and your prayers!

I've been resting at my daughter's house, and just came home yesterday...but now, I'm going back there again. Cannot bend down, or lift anything heavy for two weeks, at least. My eye patch is off, and only have to wear it at night when I sleep (not to rub my eye)

I uploaded one of my most favorite song from 1973, by Jim Croce...Time in a Bottle. A couple weeks ago, my son found this beautiful huge piece of sea glass on the beach, and gave it to me...it was actually a beer bottle, from 1965, as you can see the back of it...from Geo. Ballantine & Sons, a famous Brewing company, that made Ballantine Ale. They were a huge beer brewing company that started out in the late eighteen hundred, through the sixties, until some other companies took over their name. The brewery has been shut down around that time, or even earlier! Well, that's the story on that!

Wouldn't it be nice to save time in a bottle?...yes, we can do that by cherishing every moment in our life, and spending time with our loved ones and friends! Doing 'good' for others, and seeing the 'best' and not the worst. If you could do that, you will have saved all the time, and can look back, knowing you have no regrets. Time heals all wounds...especially physical ones, and I will be on my way to recovery real soon!

My 'sea glass' collection...took at least 10yrs to collect these precious, perfectly polished sea glass that the ocean washes out. It's very rare to find a few, here-and-there, scattered on the beach. Just think; in order for these glass pieces to get these shapes...it takes several decades from broken bottles dropped into the ocean, to get these shapes! Beautiful jewelry can be designed by these gorgeous sea glass; I just don't have enough...or maybe!
As the saying goes..."one man's garbage, is another man's treasure". Apparently, these bottles have been dropped into the ocean off ships, storms and waves have been battering them to break up and form into shapes! What Is Sea Glass Or Beach Glass?


Sea glass or beach glass comes from our lost broken glass that found its way to the sea where it is transformed into frosted gem like treasures by the natural tumbling action of the tides. Both terms sea glass or beach glass can refer to glass that has emerged from the sea and beach glass refers to glass that has emerged from a body of fresh water such as one of the Great Lakes. In Puerto Rico sea glass is sometimes called crystal de mar or vidrio de mar. Sea glass is often poetically referred to as "Mermaids Tears" and washes up on beaches all over the world. In writing you will sometimes see seaglass, or beachglass. I love the oneness of "seaglass" after all those years in the ocean it has become something beyond man made glass. It is as if the glass has blended with the sea and the two are now inseparable. The way you can hold a seashell up to your ear and hear the ocean I find that you can feel the power of the sea when you hold a piece of sea glass in your hand.

#Breakfastlove

Curried Potatoes and Egg Scramble
I have not been photographing my foods in the last couple weeks...and if I actually did, I was not pleased with it. As you can see, this delicious Curried Egg Scramble is from at least a year and a half ago, and it was taken with my old camera, which has been replaced with a much better one, soon after this! I'm still hooked on Pinterest as you may all know, finding more, and more gorgeous things, and amazing foods to re-pin! I'm on the breakfast "mode" at this moment...although, I only had my favorite caffee latte and ate an entire grapefruit, but I'm seriously craving some good, hearty and healthy breakfast. My curried potatoes would do well with the scrambled eggs, but I don't have any eggs in the house. (I left it at my daughters when we went shopping together a few days ago)
...NO EGGS!...that is so not acceptable! Click on the link, for the recipe!

One thing for sure...I have to have my Caffe Latte, and not just any coffee with milk, or cream, this is the authentic important Italian coffee, made in an authentic espresso maker...actually, an electric one, and a very unusual one, at that. Just look at the yummy foam, and the cinnamon sprinkling. You have to have fat-free milk in able to make a fabulous foam like that, and of course the steam feature on the coffee maker...and a little practice indeed!
You guessed it; it's another Thrift Find...the unique, electric espresso coffee maker, and the Starbucks mug! It' even got the Starbucks name engraved in it! Coffee maker is made in Italy, of course...$9.99, and the mug was $.99 of course, from my local Goodwill store!
I did not just get this coffee pot, and mug...it's been about two months ago! I happen to stumble upon it, and wondered why it hasn't been snapped up, since I went to Goodwill in the late afternoon, and by then all the great items are taken. Every morning, they bring out at least 3 or 4 bins of amazing donated stuff...and at least 90% of those items are nearly new, or some of it brand new, donated by companies.

Even the furniture is donated by furniture companies, when they are no longer in style...amazing...absolutely amazing. The 5 star hotel, the Breakers has been donating extremely expensive furniture, such as armoirs, desks, chairs, from the hotel, for a ridiculously low price, a fraction of what they actually cost

I will tell you why this coffee pot was probably donated...#1 because the people did not want to bother with using it...#2, because they had a nasty "messy" accident with it, like I did! #2 is the right answer. The part, where you put the coffee grains in, and close it, must be closed tightly...you have to twist it to the right, just like I have it in the photo, otherwise when the coffee is brewing, and filling the cup, it will splatter...and I mean splatter all over you counter, your wall...even up to the ceiling....yes it will, and it did! I was devastated when it happened. Took me an hour to clean the mess up. Now, I'm very careful with it.
Just wanted to share this photo of the amazing sky at sunset...I happen to go outside on my balcony to look across the street, and gazed at God's nature beauty, of beauties....the Glazing Sky!...Wow, oh, wow...these red streaks were all the way across into the horizon....a perfect Pinterest share photo...of Palm Beach sky!
Isn't this stunning?...usually when the sky is like that, they say it's going to be windy the next day, but that wasn't the case, at all!

Spicy Thai Squid (Calamari) Salad

When it comes to being sick, I'm the worst person that I know, and even; the worst "patient" that I know! My family can't stand to be around me, I'm so grouchy, irritable, and miserable! Yes, it's all true!...sad to say, but it is!
Last Sunday, the day of my previous post with my simple but yummy almond cookies, I had the craving for something spicy, light, and healthy. I could have easily ordered a take-out fresh squid salad and perhaps some Pad Thai pasta from our local Thai restaurant that has been around for years, but oh no! I had a better idea...I will make my own Squid Salad!
When you are sick with a horrible flu that came back again...to smack you over the head with even a harder blow, and give you a humongous headache, and have every bone in your body aching, even the hair strands on the top of your head aching, the last thing you want to do is to defrost a 2 pound bag of frozen baby squid, clean them and cut them...cook them, and make yourself the most delicious squid salad you ever had in your life...well, THAT'S ALL WORTH IT!
Our local seafood markets are usually closed on Sunday, but knowing that our beloved favorite Publix supermarket carries everything, and has the best seafood department as well, I decided to shop for my squid salad ingredients...everything fresh! Unfortunately they only sell squid frozen in a 2 pound package, which was fine with me. Paying $14.99 for 2 lbs of Calamari, even if frozen, is still better than ordering a squid (calamari) salad which is barely enough for 2 and paying $13.99 for it and get aggravated because they put the dressing on it in advance and the salad gets wilted by swimming in the dressing...I do love the

Thai spicy dressing...although, not overpowering my salad! I already had some fresh veggies from Whole Foods, and the organic fresh ginger, so I was all set for my project...sick-and-all, just eagerly wanting to eat fresh spicy squid salad! All I needed, was a little creativity, which I still had the "spark"...and a beautiful salad was created...I felt a whole lot better after that, and since then!

Spicy Thai Squid (Calamari) Salad
my own creation

1 lb. cleaned squid
1 bunch of loosely packed fresh mint
1 bunch of loosely packed fresh cilantro
1 bunch scallion, cleaned, and sliced diagonal into
about 2 inch pieces
2 medium carrots cleaned, and shredded
about 5 thin slices of peeled, fresh sliced  ginger
1 lime cut into quarters
1 bag of ready cut, pre-washed mixed salad

For the Dressing:

1/4 cup Asian Fish Sauce
1/4 cup Thai Style Chili Sauce
juice of 1 lime
2 teaspoons rice vinegar
1 teaspoon crushed red pepper

If you can't find 1 lb. squid, you will have to get the 2 lb. frozen package, and cut open, empty, and will have to defrost the entire thing in cold running water (don't worry, you will be using up the entire thing)










A bit of a job, but so well worth it. After squid has defrosted, clean the entire inside body, by pulling out the little plastic part that is inside, and dispose of it. Also, save the tentacles, try not to rip them...leaving it intact.
Slice the squid across, into little rings,drop them all in a medium pot of boiling water, bring to boil...do not boil for more than about 1 or 2 minutes, or it will get rubbery!

Strain in a colander with cold water, and clean the little white particles from them. Set aside, and continue with the salad.


Very important: you have to set up your "mi sen plaz"...all your ingredients in a row, just like this. Your grated carrots, your chopped cilantro, the sliced scallions, I added with some fresh chopped mint, your dressing, combining them with the fresh ginger slices, and of course your cut limes.







This is the Thai Style Chili Sauce I used, along with the Thai Seasoned Fish Sauce.












At this point, you can just enjoy your salad without the lettuce, just with the mentioned ingredients.

You can individually set up your own salad by using the ingredients, including the dressing, and stretch it even further with the healthy delicious salad.










By adding the lettuce a little more dressing to toss, you have a full meal...so satisfying, healthy and delicious.

BTW- I spent about $36.00 which seemed expensive, but not, when this generously served 4. The leftovers were separately saved for appetizer to share with family, the next day! I still have plenty of vegetables leftover, and the sauces as well!
Incidentally, I have lost an additional pound...so now, I'm down 15 lbs. total since I started back in the first week of January of this year!

Farfalle Pasta with Cream, Salmon, and Peas

I've been making this delicious pasta since the nineties but cannot remember the original source...I just know that it's absolutely divine! The only difference is, that I cut down on the butter and the heavy cream used in this dish to lighten it up a bit. There are other similar pasta dishes out there but with the smoked salmon, instead of the fresh and they don't use the petite frozen peas, or garnish it with dill. The fresh salmon gives it a lighter taste where you don't get that "smoky" aftertaste from the smoked salmon.
This beautiful dish represent Spring, it is also linked to #greenslove @ Mis Pensamientos and will be honoring St. Patrick's Day...although it's far from being an Irish dish, but at least it's green!

Farfalle Pasta with Cream, Salmon, and Peas
my own creation

12 ounces  (1 1/2 pound) Farfalle Pasta
1 Tbsp. unsalted butter
1 Tbsp. extra virgin olive oil
1 shallot chopped
1/4 cup dry white wine
3/4 cup heavy cream
1 teaspoon grated lemon zest
juice of one fresh lemon
1/2 pound fresh salmon with skin on
2 Tbsp. sliced thin scallions (green part only)
2 Tbsp. fresh dill snipped with kitchen shears
sea salt, and freshly ground pepper

Boil pasta in a large pot, less than al-dente. Drain pasta, reserving 1/2 cup. In a large wok or skillet, saute shallots till soft and wilted. Add the wine and cook down until almost evaporated. Add cream, and bring to a boil.Add the peas, and just let it cook for a minute or two in the cream. In the meantime bake, or cook in a skillet the salmon piece adding the 1 Tbsp olive oil and sprinkle a little sea salt, and freshly ground pepper.Cook for about 8 minutes (will be cooking for an addition 2 minutes combined in the pasta)

Add pasta to cream mixture, along with the lemon juice, lemon zest. With a fork flake the salmon in small pieces off from the skin, and add to the pasta mixture. Add the scallions, 1 Tbsp. of the fresh dill, and add the reserved pasta water, if needed. Adjust the seasoning with sea salt and pepper.You can also drizzle a little bit of the extra virgin olive oil on top.
Serves 4

Chocolate-Banana Frozen Pops...and Giveaway

I've been wanting to make something with all the Dove chocolate products that my daughter Lora received from the Dove people, to try out their products. She shared some with me, but every time I get the chocolate cravings, I just nibble on the silk and smooth Dove chocolate pieces, and little nuggets...even though some are for baking. They are incredibly rich, creamy and so amazingly delicious!
As far as I'm concerned, when you get the craving for chocolates, Dove, or Godiva chocolates are the only ones that can satisfy your craving...although Godiva has not come up with their product to bake with, but Dove, has...it should be available in the supermarkets by now. I really wanted to melt these little chocolate silky nuggets to dip them into strawberries, but I did not have the large ones, so I settled for nice, not too ripe banana pieces. I've seen the "store bought" simple chocolate covered frozen bananas that a friend of mine boasts about...nothing compares to the cute little pop sized ones dipped into melted down chocolate pieces, and sprinkle them with the confetti sprinkles, and pop them in the freezer. I could not wait for them to freeze and grabbed my camera to take the photos, while I had some sunshine streaming into my condo!
BTW-It's been 2 months now since I started my Weight Watchers program...and have lost 13 lbs. which averages out to about 1.6 lbs a week...gaining 2 lbs during the weekend, and losing it again the following week, plus 1 more!
So, there you have it...who says you cannot enjoy a chocolate Banana frozen pop, or two...to satisfy your sweet tooth? They are 5 points each...just be cautious!
As a way of thanking all of you...my friends, I have this beautiful authentic LENOX candy dish to give you, as a giveaway for all your kind words, and support for not just the last 2 months, but for the nearly 2 years of supporting my blog, which I so reluctantly wanted to do!
The LENOX candy dish is 4 inches in diameter, the original pretty simple beige, with the gold trimming, and little heart shaped design around the dish. Isn't this a pretty photo I took, with the reflection of the heart shape in the sunlight? The dish is about less than 3 inches tall!
Better yet...as you know my blog is not just about "good food", but "good thrift finds"...and I was totally blown away when I found this gorgeous little candy dish at my local Goodwill...it was just staring at me, or me staring at it, when I saw it sitting on the shelf, I immediately recognized that it's a LENOX. My hand was shaking to see the price on the back...$4.99...seriously! There is not a mark, or any kind of flaws on this beautiful dish. It retails, at least $40.00 if not more; I'm sure of that! This is the original style, and color.

Again...same rules apply: Just make sure you follow my blog...that's all! My FRIEND CONNECT Google list was totally taken off by Google, so that means I lost 112 additional followers. I specifically asked a few new followers to please follow me on my existing follow list, after I followed them back...well, I'm hoping they will do so, because I am -112 followers, as of the first of March!

Snowflake Muffins...and Neighborhood Christmas Lights

Since I noticed these ultra gorgeous muffins on my Hungarian food blogger friend's blog Citromhab...which literally means Lemonfoam!  I would like you to meet the talent behind these amazing cupcakes, and the snowflakes made with royal icing, has caught my attention that I haven't seen on any of the foodblogs, yet!

Erzsébet has a tremendous talent for baking cakes, and yeast breads and rolls, as do quite a few of the other Hungarian ladies, which you can see on my blogroll list.Their cakes are the traditional European cakes that differ from ours! Another favorite of mine, among others, is Gizi with her amazing cake and dessert creations...but oh, my!...can that lady cook. Her cooking is truly delicious and authentic Hungarian!

With Erzsebet's permission, I am proud to present her festive Snowflake Muffins and please, do visit her blog to check out her other fabulous cakes, and various other delightful desserts!

If anyone has the "little elves" working in her kitchen... well, in case you don't see them around since the last week or so, they are busily working away in her kitchen, baking all the beautiful things!

I know I can't fool you, and I'm not even trying to, because I don't decorate like this but I am a fairly good baker. What I meant to say,  I don't can't decorate like this...it is just not possible, yet!

Alexia Foods Cooking Demo, and Gala Dinner

When you are attending a Gala Dinner, just make sure it's actually a GALA! According to the Webster Dictionary, it is referred to, as: Festive Occasion, Celebration, Special Entertainment, and Showy...and that it was! Anything less than that would not have been the proper name for this festive occasion, hosted by Alexia Foods!
Yes, all these flavors of Alexia's fries, were served for the appetizer course, open bar, and afterwards, the Cooking Demo, by Chef Tyler Florence, and the Gala Dinner. Doesn't this sound exciting, already?...you bet it was!

Getting the stage ready for Chef Tyler Florence to demonstrate a simple, and delicious Pork Chops dish, made gourmet!...(sorry, no photo of the dish)
Watching the cooking demonstration, so amazing, Chef Tyler Florence making this simple dish with such style, grace, and so comfortable, with such ease, was so nice to watch. The did show the the dish on the large screen, but my photo turned out blurry, so I had to delete it!
The table setting was so elegant, the appetizers were divine, and starting with the first course: Bibb Lettuce Salad, with Honey Roasted Pears, Glazed Pecan, and Bleu Cheese Vinaigrette
For the Entree: Brandt Beef Farms Filet Mignon, and Meyer Lemon Roasted Prawns...Heirloom Carrots, Celery Root Puree, and Peppercorn Demi Glaze. For an entree: as amazing as this, I tend to forget that I shouldn't consume eating a lot of beef. (well, maybe once a month)...I just exceeded my limit...guilty, but a happy feeling!
For dessert: Scharffen Berger Chocolate Mousse, Sourdough Bread Pudding, and Cowgirl Creamy Cheesecake...yumm!

Back at our hotel room...before turning in for the night, couldn't resist taking a photo of the night scene. I'm such a fanatic for view photos, and my little trusty Canon camera does take great photos in pitch darkness, as long as there are lights in the background!
This is the sunrise scene, at approx. 6:30am, Sunday, Nov. 5th...our final day for meeting up at the Farewell Brunch. I hope you don't think I'm a lunatic for taking all these photos (don't answer that.LOL) I'm an early riser, actually it was one hour ahead...changing the clocks back, 1 hr.
