Still having plenty of issues with my new Windows 8...new camera, and now I purchased a new HP printer/scanner to be compatible with the new PC. Will just have to have patience in getting all the equipment together and will create a harmonious effect...as soon as it is all completed.

In the meantime, I will be posting a couple of old favorites from my blog, and a new one that I just discovered through Pinterest!

Click on the title to find this gorgeous Blueberry Mini Tart with  ... mascarpone cream filling!

I've been buying so much blueberries lately, just enjoying them sprinkled on my shredded wheat cereal in the morning, but will be making some nice desserts soon. I saved this gorgeous mini tart on my Pinterest board...the photos are amazing; professional photography...no doubt!
Always curious to find the actual source it came from, and I found it! Gladly sharing it with you!

Today is Yesterday was... St. Patrick's Day...celebrated mostly in Ireland, but here in the United States as well...and all over the world. You don't have to be Irish to celebrate this special day, just have the love of 'green' as I do...have the 'luck of the Irish'...and mostly love of the traditional Irish food, bread...as in Soda Bread, which I also made, just not posting it today since my daughter Lora, @ Cake Duchess, made the same exact recipe and posted hers, for today.

I spend way too much time on Pinterest, and not enough time on my blog these last few months. I cannot download photos from my camera for the last couple weeks...and of course, to upload. I ordered the needed accessories to replace the old ones for my Canon Power Shot SX130, from Amazon; (cable cord, and adapter)...and if that doesn't work, then I will upgrade to a Canon Rebel camera!

Cavolfiore con Uovo-{Cauliflower in Egg Batter}

Hi Friends,
I've been wanting to do a blog post and go around commenting for the past two weeks now. I'm feeling much better now, no sciatica pain...battled a bad flu since that time as well. Your thoughtful comments have meant so much to me to know I have you as my friends...and not just 'readers' as quite a few bloggers refer to other bloggers, and I have actually discovered the reason 'why'!

 While I was checking sources for recipes on Pinterest, I have bookmarked several sights with the most amazing photos and recipes but unfortunately these bloggers have only a few commenters for their lovely posts...and it really is sad. Maybe they're not reaching out for more viewers or have their blog in the research engines or RSS feeds. Don't know and...just wondering!

Until now, I just haven't had the strength emotionally and spiritually; even though I made two amazing appetizer dishes in the one month anniversary of Rosario's passing.These two appet…

As the saying goes..."the eyes are windows to the soul"...well, let me tell you; I've been doing a lot of 'soul searching' in the last few days, after the holidays! A lot has happened since. I finally decided to get an eye exam, knowing that I need a new prescription for my eyes, and new glasses (I wear contact lenses, as well) Have had problems with both lately, my right eye not feeling just comfortable, blurriness, and sharp pain at times.

Just from my eye exam visit this Monday, (which took 2hrs) I was directed to visit a Retinal Eye Care place the next day for my right eye. Well, that was this morning...after 3hrs of thorough test, eye drops, yellow dye that they inject into your arm to see more...I found out that I damaged, badly scratched retina...swelling, as well. I will be needing an eye surgery, which will take place next Monday and hopefully I will regain my eye sight normally. Over the last few days, I have lost 75% of my vision in the right eye.

One potato...two potato...well, you know the rest of this little 'nursery rhyme'...not trying to put you to sleep, but it seems I have done so. Not one single comment since yesterday, on my Sweet Potato Bread... so movin' on! I purchased 2 large beautiful sweet potatoes at Walmart Super Store this week, and instead of making the usual baked sweet potatoes, I tried something different! You've seen the first version, now here's the second!

I have a confession to make: I am a Pinterest 'junkie' ...I love Pinterest! so there, I said it again! Every time I pin one of your fabulous dishes or desserts, sorry to say, I get stuck pinning, and pinning, and more pinning. You find so many awesome things on Pinterest, and so many ideas, and recipes for things that catches your eyes. You just click on the source, and it brings you to the site, or to the blog and you are very pleasantly surprised. I actually got the idea for the Oven Baked Chipotle Chile Sweet Baked Pota…

Wild Mushroom Risotto...and Pinterest

Since I've been hooked on Pinterest, I've been neglecting my own posts, and photos to upload to blog about and making excuses to feature other bloggers' foods...and why not? I have been so impressed with all the various wonderful things I find on Pinterest among them my foodie friends' pins, and as soon as I visit someone's food blog these days, I immediately want to pin their amazing creations....is that good, or bad...or just a little crazy?!

We all have are different style of foods...different presentations...different photo technique; some bloggers just want to make photos small, and concentrate on the actual recipe, some bloggers want sheer elegance and make sure to set up fancy props, flowers, concentrate on the dish that is being served in...some blogger get a real in your face close up (guilty)...and why is that? I even ask myself. Well, the answer…
