Pepperoni and Mushroom Pizza

Hi everyone! Not much to post since nearly 2 weeks of absence. Although, I did post my Pepperoni and Mushroom Pizza photo on facebook...which I have also been absent from for 3 months now. Wasn't a smart thing to post the pizza photos, since I didn't have it on my blog and it made it look like I just posted a 'random' store bought pizza.
I don't know about you, and how you feel about the 'follow' part on facebook...seems like I follow a lot of people, especially family relatives...ie. cousins, and close friends, but what I have discovered lately...duhh! (dummy me)...pondering over the fact that I have not gotten any feedback of my postings from any, or most of these close friends and relatives...I mean...what gives? I never stopped getting their latest 'tid-bits', photos of their kids mostly...their latest trips, etc. and I have always commented and 'liked'...so when I finally found out that they are NOT following me...I stopped following them...but not un-friending them, and at that point I gave up my interest in viewing what's going on out there. I discovered a totally new 'meaning' to my facebook page; just view what is being sent to my 'timeline' and keep 'liking' and commenting back to friends' that took the time to see my posts as well! So, that's that...getting back to my pizza!
It is really so easy to make your own fresh pizza dough by mixing the dough in a sturdy Kitchen-Aid mixer with a dough hook, or place the ingredients in a Bread Machine, and let it do its work. Just let the dough rise in a large oiled bowl, and the rest is so easy! I seem to be boring, but my favorite pizza topping is pepperoni, mushroom, and onions...although you can't see it all in the photo...it's in there!

Quick Basic Pizza Dough


  • 2 packets (1/4 ounce each) active dry yeast
  • 2 tablespoons sugar
  • 1/4 cup olive oil, plus more for bowl and brushing
  • 2 teaspoons coarse salt
  • 4 cups all-purpose flour (spooned and leveled), plus more for work surface

COOK'S NOTE

To freeze, you can wrap the dough in plastic and freeze it in a resealable freezer bag for up to 3 months. If you plan to use it in a recipe that calls for half a batch, divide it before freezing.

Note: This pizza is from half a batch...divide the dough in half, and wrap the other half in plastic wrap...freeze for another use, or make 2 pizzas with the recipe!

DIRECTIONS

  1. STEP 1

    Pour 1 1/2 cups warm water into a large bowl; sprinkle with yeast and let stand until foamy, about 5 minutes.
  2. STEP 2

    Whisk sugar, oil, and salt into yeast mixture. Add flour and stir until a sticky dough forms. Transfer dough to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until dough has doubled in bulk, about 1 hour. Turn out onto a lightly floured work surface and gently knead 1 or 2 times before using.

After kneading the dough once or twice, let the dough rest on the floured board...and if you're not a practice 'pizza thrower'...just get a rolling pin and roll into a circle from each direction as dough gets more elastic and your can fit it onto the pizza pan.








As you carefully fit it into the pizza pan, you can brush olive oil, and sprinkle it with salt, pepper, and garlic powder (I also used hot chili pepper flakes). Let the dough rise a little longer, and you can form nice shapely rims around the edges.








Next, I saute my sliced mushroom, and onions just slightly. (nothing worse than topping pizza with raw sliced mushroom, and raw sliced onions)...and paying $18.99 for a large pizza...horrific idea!








Here's a little secret...I pre-bake my dough at 450 degrees F. for 7 minutes, (this assures you not getting a soggy finish) ...next, I spoon my tomato sauce, and topping on it.









I make my own sauce...no pre-cooking needed, just add the entire 28 oz can of your favorite sauce into a medium bowl, add some extra virgin olive oil, abt. 1/4 cup, salt, and pepper, a few fresh torn basil leaves. Now, you are ready to top the pre-baked dough...(seen in the above photo)







Bake for about 10 more minutes, and at the last process, add more cheese and top with pepperoni slices.










Pre-sliced pepperoni comes in a convenient plastic bag, sliced 'paper thin'...so you really just add them at the few remaining minutes of baking time, on top of the shredded mozzarella cheese.










Now, you are ready to finish baking with the pepperoni topping, for an additional 5 more minutes. Total baking time abt. 22-25 minutes, at 450 degrees F.







The finished product! Perfect pizza,
not overflowing with extra cheese, but you can add more for the last baking process if you like. Just the right amount of sauce and topping...enjoy!

Baked Potato Soup

Hi Everyone! I'm back again with a (not so exciting) new post...which you're probably asking "what's with the Baked Potato soup?" After all these weeks of absence, you would think I would come back with some exquisite, and amazing food to show off....hey, but just look at the gorgeous 'hand stitched' Italian table cloth (never used), the antique silver plated soup spoon, and the Italian napkin...all these things handed down to my daughter from her sweet M-in-law from Italy...except for the soup spoon which an entire set inherited from my Hungarian aunt (Mariska)

This is truly an amazing comforting soup...'for the soul'...just look at the crispy yummy bacon bits, and the chunky pieces of 2 boiled potatoes, which was an addition to the homemade vegetable broth that it was boiled in, and added 2 peeled leftover baked potatoes...all mixed together in the blender, heated up and added 1/2 cup sour cream at the end. You can substitute Greek yogurt instead! Creamy soups are so easy to make...all you need is a blender, food processor, or even a 'hand held immersion blender/mixer) and your creativity!

I missed so much opportunity to be posting so many different foods that I actually made in the last weeks that just flew by...not photographing anything...could also have had the chance to do a few Restaurant Reviews...(no photos)...well, could've...would've...should've...all have gone by, not focusing on it. I admit, I do regret procrastinating, and feeling 'down in the dumps' (no excuse)...can't take everything to 'heart' that we have no control over!
As you know, I'm a huge Pinterest fan...love, love, finding some awesome things on Pinterest...especially foods, fashion, home décor, and travel...my oh, my...the amazing places we could go to...just have the $$$!
Well, as you may, or may not know, but I have a board on Pinterest called #soup love where I found this most gorgeous and yummy Fully Loaded Baked Potato Soup and decided that I want to make it, just did not have 6 slices of bacon...only 3~ I did not follow their recipe all the way thru...so I made it my own...next time I will follow through the step-by-step recipe. When you see a photo on Pinterest, just click on the photo and it will lead you to the 'source' and most likely you will find the recipe, or the 'link' that it came from. In this case, I did find the source; which is called...

Here's the recipe and my adaptation in blue:

Fully Loaded Baked Potato Soup

Ingredients

  • 4 whole Extra Large Baked Potatoes Or 8 Regular Baked Potatoes (I used 2 med. leftover baked potatoes and 2 med. peeled, and diced potatoes boiled in 2 cups of 'homemade veg. broth)
  • 6 slices Bacon, Diced (I used 3 slices of bacon)
  • 6 Tablespoons Butter (no butter used)
  • ½ whole Onion, Chopped (1 med. onion chopped)
  • 2 cloves Garlic, Minced
  • ⅓ cups All-purpose Flour (2 Tbsp. all-purp. flour)
  • 4 cups Chicken Stock (2 cups homemade vegetable stock)
  • ½ teaspoons Sea Salt (or To Taste)
  • 2 teaspoons Ground Pepper, Or To Taste
  • 2 Tablespoons Olive Oil (I used 3 Tbsp. olive oil)
  • 3 cups Shredded Cheddar Cheese (no cheese)
  • 4 whole Scallions (Green Onions), Sliced (no scallions) used sprig of parsley
  • 1 cup Greek Yogurt (1/2 cup sour cream)

Preparation Instructions

Scoop the white insides out of the baked potato skins. Roughly chop the white insides and set them aside. Chop potato skins and set aside.
In a large stock pot brown the diced bacon over medium heat. Once it’s crispy, remove bacon from the pan and drain off the grease.
Add 4 tablespoons butter to the brown bits at the bottom of the stock pot. Add onion and continue to cook over medium heat until onion is caramelized. Add minced garlic and flour. Stir flour until absorbed by the butter and cooked, about 1-2 minutes.
While stirring, slowly add chicken stock to the flour mixture to prevent lumps. Bring to a simmer then turn heat to low. Add the insides of the diced baked potato. Add sea salt and pepper. Cover pot and continue to cook over low heat.
In a large saute pan add 2 tablespoons of butter and 2 tablespoons olive oil over medium-high heat and heat until all of the butter is melted. Add the chopped potato skins and fry them until crisp and heated through.
Add 1/2 of the crumbled bacon, 2 cups of cheddar cheese, 2/3 of the scallions and Greek yogurt into the pot of soup. Stir well and continue to cook over low heat until heated through and cheese is melted.
Serve soup topped with remaining bacon, cheddar cheese, scallions and crisp potato skins.
 

OK...now that this recipe is out of the way...I'd like to share with you our typical S. Florida cloudy skies...so close that you can almost touch it...followed by a super storm immediately after the clouds, lasting for about an hour and followed by sunshine, or again more storms!
A typical Sunday afternoon...4:00PM; returning from the PGA Mall w/family...going over the Southern Blvd. bridge in West Palm Beach...stopped at the red light on the bridge, when suddenly realizing the huge rain cloud hovering over our heads.
Got out of the Jeep...so did other people, to snap photos of the storm cloud!
You would think this is a 'black and white' photo...but it's not; it is actually the grey color that it was taken with color!
Ten minutes later at my destination...on the beach! The clouds look like they could just 'devour you'...a bit 'scary'!
Another 10 more minutes later; have you every seen clouds like that?...as they say..."this is South Florida"...indeed it is...a 'typical S. Florida weather'! (just an hour earlier, it was sunny, with a few scattered clouds)

#Palm Beach Love

I must admit, this is not a 'wordless Wednesday'...or a 'silent Sunday'...I tried to upload my latest photos of my amazing Avocado Bruschetta; but my upload is just not happening...something went wrong, so I'm sharing this beautiful photos of my evening walks on our beautiful location...on the island of Palm Beach...where I reside!

A quiet evening, just a few cars passing through!

I've been walking all week this week for 2 miles...and I must admit it really is quite enjoyable with the weather we've been having here...totally spring temperatures, sunshine just about every day; and instead of walking on the beach, I decided to walk on the road that is called South Ocean Boulevard...the most famous road in Palm Beach!
This is the famous Palm Beach golf course...you can see the reflection of the sunset...beautiful crisp fresh air, with the most perfect tropical breeze!
How can you not enjoy the marvel of 'mother nature' when its right in front of you?...this is the golf  course, just when the sun was setting, and I could not resist taking the photos. We all need to 'count our blessings'...there is beauty all around us; we just have to capture the moment!

A one hour walk in nature, refreshes the soul, and spirit; it gives you a new 'outlook on life'...knowing that it is helpful for your health, and makes you feel all new and refreshed. It sure is the most inexpensive exercise  in your life, to make a difference!
There is so much beauty all around us...we just miss it when we are  so occupied in our lives, and miss all the God-given nature that should put joy in our lives...we miss out so much in life that does not cost anything; just giving thanks to our Creator!
Every evening, the sky is different...giving off the most beautiful radiant, magical lights that you can imagine! This is jus 1 mile perimeter of my early evening walk; just about at sunset!
So, the evening ends...my walk is ended for this day...a new day begins, and I'm feeling blessed to have all my friends to share moments like this; wish you were here to take this lovely walk with me! Hugs,

While the rest of our country...even in the deep South was in a 'frozen frenzy' yesterday, here in S. Florida we had the most beautiful sunny and pleasant day of 79 degrees F. Not so, today (dreary, raining, and damp-cold-windy-chilly-nasty day)

Lemon Bread

Christmas is only 10 days away, and the year has gone by so fast that before you realize...2014 is just around the corner. I wish I had something more exciting to post, other than my average baking stuff. This super lemony and not too sweet bread was so easy to make and not planning to bother to post it...only when half of a loaf was gone, that I decided to take a photo of it and said..."why not?"...so here it is, and the recipe is right inside the container of the glazed chopped lemon peel that is only available at this time of the year, along with the glazed candied cherries and pineapples that brings back such great memories from years of past Christmas!
As you can see, this is a Florida local product and it's quite fresh and extremely potent in lemon flavor.
This past Saturday morning; since the sun decided to come out for a change after every day of cloudy and rainy weather, it was so nice to browse around and check out the little Green Market...much smaller than the one we have in West Palm Beach...but this was a really nice way to spend an hour by myself!
 
 
As I was passing through, I noticed this Rasta man weaving what it seemed like palm tree leaves at the flower stand.
 
There were all kind of local vendors selling different things...including homemade breads, rolls, and pastries; jams, jellies, handmade jewelry, candles, soaps, clothes...you name it!
 
What you see in the background are some colorful Tye-dye materials...notice the Intracoastal water on the right side...gentle breeze, and perfect mild and pleasantly warm temperature in the middle of December.
This is the bridge from Lake Worth that takes you across to the island of Palm Beach...otherwise known as S. Ocean Blvd.
The building in the background is a small hotel that used the be the Howard Johnson, years ago..same building, just remodeled.
Of all things...I was able to find some amazing and lovely peppers, hot, and sweet. I promised my granddaughter Gabby that I would make some pepper jelly for her. She loves the pepper jelly that my daughter buys for her at the WPB Green Market and that one is soo good, not too hot, and not too sweet. Hope I can make one just as good. Did google a few, and found some other good recipes on Pinterest. I love this basket, which I got from Goodwill for $1.99  last year!

Aglio Olio-Garlic and Oil Pasta

I have making Aglio Olio-Garlic and Oil Pasta for years...never, but ever, had I used anchovy fillets; it could be for the reason, that this is one of those 'hand-me-down' recipes that is by 'word of mouth' and only needs basic every day ingredients.
I own several Rachel Ray cookbooks...six, to be exact, and they are all 30 minutes or less meals. All of these cookbooks, except for 1...I paid 79 cents @Goodwill. They are all paperback, and all new books. One book which I got recently, was $3.00...also, from Goodwill. Yesterday, when I was checking out the cookbooks; even the paperback cookbook of Rachel Ray, was $5.00...still, a lot less than the retail price of $14.95. Prices have gone up on books at Goodwill...and now, they are selling their cookbooks @Amazon.com for probably less, and you would have to pay another $3.99 for shipping charge, as well. Although, if you buy $25.00 or more at Amazon; shipping is 'free'!

I'm so glad that I browsed through Rachel's 30-Minute Meals book, which every now-and-then, I consult for a quick meal. The addition of the anchovies really made a huge difference in the texture, and flavor of this simple pasta dish. You can use spaghetti or, linguine...I used a whole wheat spaghetti that stayed so firm to the bite=alt dente...and oh, so satisfying with a simple green salad, and nice crusty bread!

AGLIO OLIO-GARLIC AND OIL PASTA
Rachel Ray 30-Minute Meals

Ingredients

  • Salt
  • 1 pound spaghetti
  • 1/4 cup extra virgin olive oil (EVOO)
  • 1 container imported Italian anchovy fillets with red pepper flakes (2 ounces) – if you can't find these, use regular anchovies and add 1/2 teaspoon crushed red pepper flakes
  • 6-8 large cloves garlic
  • 1/2 cup finely chopped flat leaf parsley
  • Freshly ground black pepper
  • 1 loaf crusty bread
Serves 4

Preparation

Place a large pot of water over high heat and bring up to a boil. Once boiling, add some salt and then the pasta. Cook to al dente according to package directions. Right before draining, remove and reserve one cup of the pasta cooking water.

Place a large skillet over medium-high heat and add EVOO, about one turn of the pan. Add anchovies, garlic and pepper flakes, if you’re using them. Break up anchovies with a wooden spoon until they melt into the oil and garlic mixture.

Add reserved pasta water to the skillet, and then add the spaghetti, parsley, lots of pepper and a little salt to taste. Toss together and cook for one more minute so that the pasta has a chance to soak up some of the sauce. Serve with chunks of crusty bread for mopping up the excess goodness.


This is our fall season in Palm Beach, Florida...as of today, temperatures have fallen to a comfortable and slightly cooler feeling of what seems to be fall. This evening, just before dark...checked out the skies. Gloomy and gray; still did not rain all day long. No falling leaves, just a more comfortable cooler temperature. that tourists love to get away from the cold and snowy climate.

We are not nearly...or will be near anywhere the cold temperatures that some of you are experiencing...some sudden snow, in my hometown, in Ohio and temp. @ 39 degrees F. That is way too cold for me!
