Shrimp Ceviche...and Easter Sunday!


Hi everyone...in order to keep this staggering food blog of mine going, I must be honest with you, and mostly with myself; that I'm never gonna make the Top 9 on Foodbuzz!...Foodbuzz?...oh, how sad!...there is no more Foobuzz, so I don't have to worry about the Top 9!

Although we all remember how nice it was to be part of that 'fun' circle, meeting each other way back about 4 years ago, buzzing each others' posts...and actually even meet each other in person, at the Foodbuzz Festival events, in San Francisco! Great memories...but that's all in the past!


This post may seem out of place...or I'm out of touch; but this amazing and refreshing...all fresh veggies, and the most delicious fresh Florida shrimp marinated in fresh Florida lime juice, and the freshest chopped cilantro, also Florida product, like everything else fresh Florida grown products.
As for every holiday you may well know that not only in our immediate family do we celebrate both holidays...for Passover (no photo)...and Easter, but we always celebrate with our wonderful and best friends, who also celebrate both holidays!...so you see; we all get along, and still believe in one GOD!


I watched both the Ten Commandments movies...the Hollywood fancy version with Charleston Heston, and the most recent one on the UP channel, and the recent one was quite intriguing...realistic, and more accurate. Unlike in the old one where Charleston Heston came down from Mt. Sinai with totally white hair and beard; in the more recent one...he still had the brown hair and beard!
Also, with the Passover movie...I was very shocked to see the 1960's version of Jesus with a short straight hair...only covering his ears; and the 'blue eyes'...that was a shocker to me with the Middle Eastern Jew...could not understand the part at the Last Supper...only 8 disciples?...what happened to the other 4?...guess they didn't fit into the picture screen?...also I watched the Book of Ruth movie...that was another Hollywood glamorous festive movie...among some of the others. So, I spent an entire week of 'reconnecting' with the biblical people!

I feel bad for having to post these quick photos that I took...just didn't have a chance to take time to stage my photos; but I must admit that this shrimp ceviche...which I cam up with at the last hour of desperate attempt, to bring something to the Eastern celebration!

A few of us started out early, as usual, it's always a 'feast' at holiday; Easter is one of the biggest holiday for Italians and it is such a joyous tradition!

Nonno Sal, (Maria's husband...carving the lamb roast, which was specially purchased from an Italian meat market. It was perfectly done...medium, rare, to medium. Lamb is a very traditional Easter treat especially in Italy and Greece!

Great company, fantastic foods, we are so blessed to have great friends who are like 'family' to us!

Lora's Italian Ricotta Pie...so flaky and delicious with the ricotta, and chocolate chunks filling...yumm!

Shrimp Ceviche
recipe by; Elisabeth

2 cups grape, or cherry tomatoes diced
2 cups English seedless cucumbers diced
1 cup scallions sliced thin, including the green part
1/2 cup tomato juice
about 1 or 2 Serrano chili, sliced thin (optional)
juice of 2 limes
1/2 cup tomato juice
a handful of finely chopped scallion

Mix all the ingredients in a bowl, add sea salt and pepper to taste.

For the Shrimp ingredients
2 lbs of large shrimp peeled, deveined, and chopped
juice of 4 fresh limes

Marinate shrimp and lime juice for 30 minutes. Add shrimp to the ceviche, and serve with fresh tortilla chips.
Serves 12

Easter Menu Suggestions...Husvéti Menü Ajánlat

Today is Yesterday was... St. Patrick's Day...celebrated mostly in Ireland, but here in the United States as well...and all over the world. You don't have to be Irish to celebrate this special day, just have the love of 'green' as I do...have the 'luck of the Irish'...and mostly love of the traditional Irish food, bread...as in Soda Bread, which I also made, just not posting it today since my daughter Lora, @ Cake Duchess, made the same exact recipe and posted hers, for today.

I spend way too much time on Pinterest, and not enough time on my blog these last few months. I cannot download photos from my camera for the last couple weeks...and of course, to upload. I ordered the needed accessories to replace the old ones for my Canon Power Shot SX130, from Amazon; (cable cord, and adapter)...and if that doesn't work, then I will upgrade to a Canon Rebel camera!

This year, I will be featuring light, and Springtime suggestions...Easter is coming rather early this year, so is Passover, which always coincides with Easter...not a coincidence! For this year, I am featuring some International dishes...will be staying...have been staying away from heavy, and fatty meats, and red meats, although I do crave an occasional nice portion of steak, or homemade hamburger, grilled outdoors, with all the fixings!...never mind that, just lets concentrate on light, colorful, and tasty dishes that I have prepared in the past for spring, and summer, and stay with that!

Flourless Chocolate Mousse Cake

Yesterday was such an amazing day...later, celebrating Passover Seder with family, and friends. My only contribution was, the Flourless Chocolate Mousse Cake. (recipe will follow on the next post, along with a new post)

Passover, so meaningful to Jews... and Easter, to Christians... a religious celebration; unlike other celebrations that divide us. Easter, and Passover brings us closer together!

According to theologian, Martin Buber; "Passover celebrates a God who could not become visible, while Easter celebrates a God who had to become visible to save a sinful humanity."

Passover and Easter are both songs of springtime. Both are celebrations of a season of new growth and new births.It also unites us through our sacred history and sacred scripture. New Christians celebrated Passover up until the second century...in Luke 22:14-20...According to the Gospel of Matthew 26:17; Mark 14:12 and Luke 22:7, ...the Last Supper of Jesus was a Passover Seder meal, but according to John 12:1-it has it occurring, the day before Passover. Five, six decades later-the first celebration of Easter, was in Rome, to distinguish the Christians from the Jews.

The change was observed by the Christian followers, because the fear of death was greater than their  fear to violate God's word.

The point is; Passover is about freedom, understood as liberation from oppression, and Easter is about freedom, understood as salvation from sin!

For both Christians and Jews, the egg symbolizes life and rebirth!

For both Christians and Jews, the egg symbolizes life, and rebirth. Also, another common roots, that Easter is always celebrated during Passover=the Hebrew word, for Pesach...literally meaning, to "pass over" In Italian, it's called Pasqua, the same as in Spanish, and Greek with different spelling.

The word Easter, comes from ancient Egypt-for the worship of Astarte, the "goddess of fertility"...throughout time, it spread over to England in the 7th, and early 8th century...Their Christian celebration, attempting to convert pagans to Christianity. Also called; Eastre, from the word East!
I was in awe of the beautiful fresh green and floral plants indoor at our hosts' beautiful home. (Dr. Eric's parents')
All the plants seemed to be so alive from the perfect light from outside, and the special care given from their caretaker!
These beautiful plants represent the rebirth...a continuous process...one life succeeds the previous one. Renewal cleanses and enables that heart and soul, and mind to... find a wealth of new experiences.

Cayman Fish...and a Collage of Awards


I hope you all had a wonderful Easter weekend. Spring is hear, and so is Passover, and Easter. Actually, Passover ends tomorrow at sundown. We had a very nice and relaxing Easter Sunday at my daughter's with her in-laws who will be going back to Italy, but before they go back, on Wednesday, Teresa was cooking up a storm for Easter...but before I get into that, there's something even more exciting that I want to share with you, is this amazing fish dish, from the Grand Cayman Island, by a recently befriended blogger, by the name of Parsley Sage...sorry, I never did ask for her real first name, I figure if they want to let you know what their real name is, they would have told you so it's all right, after all it's such a cute name...maybe I should have picked Rosemary Thyme for my name on my blog,

I also like that name. Parsley Sage has such a cool and refreshing blog called The Deep Dish and she actually lives on Grand Cayman Island...and here I thought in the beginning that she is just visiting the island. When I saw her making this delicious fish with peppers, and onions, and island spices, I immediately fell in love with this colorful and yummy fish...knowing that I did have everything on hand, including fresh Salmon, but not the fish that she recommended. Also, I used scotch bonnet, and sweet peppers, shallots, and sweet onions, and I'll tell you, those scotch bonnets will set your mouth on "fire" no matter how you are trying to tone it down. Now for the recipe, you will just have to click over toThe Deep Dish blog, to find it!
Just think, you don't even have to travel to the Cayman Island, or even to West Palm Beach...on the beach, where I live, to get this authentic island recipe...I did a few minor adaptations to the dish, but over all, it was superb, over a bed of rice.
