Cleveland Winter 2017

Hello my friends, I hope you all had a great holiday. I just got back from Ohio and I thought it would be nice to put together a post to show you all a series of snowy pictures, family gathering, and great food! I'll be back to post weekly, since that was my new year's resolution! I missed you all and I promise I will be more active on the blog (and at the gym ;) ).

Madeleines

Madeleines cookies are usually on the 'pale side'...as in color; they are also dusted with powdered sugar most of the time. I purposely chose mine with light brown sugar to give it a golden color, and wanted to show of the beautiful 'groove' lines from this awesome nonstick Madeleines baking pan which I ordered from Amazon.com...seems like this online order store has become a very favorite store of mine....that's where I ordered my Nikon COOLPIX L810 camera from, as well.
Would you believe this camera even has a 'food app?'...I mean, seriously! How cool is that?! It automatically sets itself for you for great close-ups on the food, but most of the time you have to do the adjusting, how close you want it. 16.1 MP, and 26X Zoom is great!

Getting back to the Madeleines...they are so buttery, light, delicious, and so easy to make. I found the recipe on...Joy of Baking.com

Chocolate Drop Cookies...Cookbook Sundays!

Please don't be too judgemental with these yummy Chocolate Drop Cookies, made by me...but totally designed,and decorated by my "loves of my life"...2 of my 4 grandchildren! Luca (boy w/long hair) and Gabby (not shown in photo)...and I assure you, it was made with love, and lots of fun, which will be remembered for fond memories, for years to come!

Since I'm a "thrifter"...and has mentioned about a 100th time, that I got this GEM of a cookbook for only 79cents...which was the cost of paperback books, about 3 years ago!...someone obviously donated this GEM of a fabulous book...which you will never find again, at this price...anywhere!!! My lucky day! I have mentioned a few times that this is my "bible cookbook"...and it is!

Chocolate Drop Cookies 
How to Cook Everything...by Mark Bittman

adapted from the...Butter Drop Cookies

2 cups all-purpose four
1/2 teaspoon baking powder
pinch of salt
8 Tbsp. unsalted butter softened
1 cup sugar
1 teaspoon vanilla extract
1 egg
1/4 cup milk, plus more, if needed

For Chocolate Drop Cookies
melt 1 ounce unsweetened chocolate, and add to the mixture, after combining wet, and dry ingredients.

Preheat oven to 375 degrees F.
To combine the ingredients by hand, mix the flour, baking powder, and salt together in a small bowl. Cream the butter with a fork, then, mash in the sugar until well blended. Stir in the vanilla and the egg, then about half the flour mixture.

Add the milk, then the remaining flour, then a little more milk if necessary, to make a soft batter that can be dropped from a spoon.

For the Drop Chocolate Cookies:
Melt 1 ounce of unsweetened chocolate, and add to the mixture, after combining wet, and dry ingredients.

Drop rounded teaspoons of the batter onto parchment lined baking sheet and bake for about 10 minutes, or until edges are browned. Let each sheet sit on a rack for 2 minutes before removing the cookies with a spatula, and cooling them on a rack. Store in a covered container at room temperature, for  no more than a day or two. Be sure to refrigerate them, afterwards!
 

Gabby...sprinkles the colored sugars on the yummy cookies, but the best part of the frosting was...the Pillsbury Creamy Supreme Peppermint Frosting

If you still have some leftover, be sure to refrigerate it!

We went around the local neighborhood,  and to our delight, and this local neighborhood  has teamed up with the decoration, and the lights...

Cookbook Sundays-Cream Cheese Brownies

For someone who rarely bakes, I must say this decadent brownie turned out super great. When I decide to bake, it has to be either very simple, like chocolate chip cookies, or banana bread, but I couldn't resist making these brownies, because I love chocolate, and so does just about every one else in the family, except my daughter, who can live without it. She's an apple-anything, with apples lover. I found this wonderful book  called, How to Cook Everything, by Mark Bittman...where else?...but at Goodwill, for $.79. This bright gold color, caught my attention, and I immediately delved into it, grabbing it off the book shelf. This is a paperback, it was and I say, seriously, brand new. I know for a fact that the hard cover book costs $29.99, so the paperback must cost about $10.00 less. What a bargain! I am so happy that I joined Brenda at Brenda's Canadian Kitchen for the Cookbooks Sundays, except, 75% of my cookbooks are collected from my thrift finds, that I should be feeling "guilty" about for finding such treasures, but maybe not so guilty...after all those people that got rid of them had their own reasons. Just like to know what reasons?

So sorry for the inconvenience...I will post the recipe ASAP, just a lot of things going on here!



Cream Cheese Brownies

Adapted from How to Cook Everything
by; Mark Bittman

6 ounces semisweet chocolate roughly chopped
8 Tablespoons (1/4lb. unsalted butter)
softened, plus some for greasing the aluminum foil lined pan (overlap the foil, for easy removal.)
8 ounces cream cheese softened
3/4 cup sugar

1-8oz. Heath English Toffee Bits
4 eggs
1-1/2 cups plus 1 Tbsp. all-purpose flour
1 teaspoon baking powder
pinch of salt

Preheat the oven to 350 degrees. Line a 9x13 baking pan with heavy duty aluminum foil, let it overhang a few inches for easy lifting. Grease the aluminum foil.Combine the chocolate and 5 Tbsp.of the butter in a medium saucepan over very low heat, stirring occasionally. When the chocolate is just about melted, remove from the heat and continue to stir until the mixture is smooth.

Use a fork or electric mixture to cream the remaining butter with the cream cheese, and 1/4 cup of the sugar. Beat in 1 of the eggs, and stir in the 1 Tbsp. of the flour, and the 1 teaspoon of vanilla.

In a separate bowl, beat the 3 eggs with the 3/4 cup sugar, until thick, and creamy. In a large separate bowl, mix together the baking powder, salt, and the flour. Gently stir into the egg mixture, and fold in the melted chocolate mixture and the Heath Toffee Bits, or (1/2 cups chopped nuts) Spread the chocolate mixture in the prepared pan, and spread the cream cheese mixture on the top. Swirl through all, with a rubber spatula, to create a marble effect.
Bake for 25 -35 minutes, until barely set, to create a fudge effect. Cool on rack before cutting.
Store covered in the refrigerator. Serves 16. (I was able to get 20 servings)

Note: I used a little more flour, less sugar, increased the butter, and eggs...otherwise, I followed the recipe, and instructions for baking.
As you can see, I use this book so much...it has "doggie ears"...if you're looking for pictures of foods, this is not the book to find it, but if you want to look up any great and uncomplicated recipes, this is the book to find anything from A-Z.
