Sun Dried Tomatoes in Herbed Olive Oil

It's been nearly a year and a half since I made this wonderful Sun Dried Tomatoes in Herbed Olive Oil, and since I wanted to pin this to Pinterest to my "pickles and jam" board, which needed more home canned goods, I thought it would be a good idea to post it again.

I have to admit, I did make a very nice dinner a week ago, which consisted of a light salad from my dear friend Angie, @ Angie's Recipes

I actually made this salad, along with bake haddock with a gratin topping, and shared it with a friend of mine. She wanted us to celebrate Prince's life...which I thought was a little odd...but, why not? I took photos of the salad, which was really very nice, but I'm my worst "self critic" and deleted the photos! The only thing that was different; is the sweet potatoes were served on the side, and the baby spinach I purchased also was mixed with baby arugula, which was just perfect. Thank you Angie, for your amazing recipe, as for all the others, especially the most beautiful breads that Angie bakes.

Yesterday, my daughter Lora and I went to Costco to get a few items...you cannot go to Costco, for less than $100. even if you shoot for $50. minimum which some people can...but it's almost impossible! She stocked up on cookies, juices, and popcorn for the kids' parties at the end of the year parties, and I requested a box of their superb croissants which is so, so, good! You can have them for breakfast, fill them with whatever you like. For lunch, I sliced some cold rotisserie chicken breast which I purchased at my local Publix supermarket, and topped it with coleslaw that I fixed from a already shredded cabbage in a bag, and mixed my honey mustard dressing!....so, so, yummy...(not photo of that, either)

I will be sharing some of my "thrift finds" with you, from yesterday! Since Goodwill is so close to my daughter's neighborhood in West Palm Beach, every time I go to Lora's house I have to stop at Goodwill to see what they have. Apparently, Mikasa, and Studio Nova are connected, which I did not know until now. What really is nice, that companies like that, and others donate discontinued items to Goodwill which happens to be BRAND NEW...and it was my lucky day!

I found this Tupperware set...don't even know if its a set, but these smaller pieces were inside of this "classic" Tupperware from the 70's, or 80's...brand new, as you can see. They don't make this high quality any longer.
Love the beautiful brick color, and the sturdy material. You just cannot find this any more...brand new...brand new!
I kid you not..this was the actual price of this most amazing Tupperware, that for some reason was brand new!
I love this crystal vase, bowl, or container...another brand new product!
Just look...from Pier 1 Imports...check out the price! I will be using this for my sea glass, collected from my beach, or place a nice large candle, or even for a vase...so many uses!
A beautiful stainless steel mixing bowl...just the right size, I need! Love this little bowl!

A crystal bud vase...there was no price on this vase...I asked how much, and I was told that it has to be $2.99...only, because its crystal, and because it has some beautiful design...which does not show up on the photo!
My most favorite...of favorites...Baby's Breath! Cost?....$3.99, and it will last you for a week, changing the water for a nice fresh one, each day, adding a little bit of whit vinegar each time to the water, along with ice cubes!

Feta Cheese LOVE...and taking a short break!

Tomato, feta cheese, fresh mint, and red onion salad with lemon, and white wine vinaigrette

Since I have a blog about "food" which naturally is a food blog, also I do have it listed as "thrift"...previously "finds" as well. I still find fabulous thrift finds...just when I happen to walk into Goodwill and something will just "pop" out to greet me, but my main focus still is FOOD and being THRIFTY!

As you have seen my Spanakopita in my previous post, I used the same feta cheese in two of these dishes, as well!
At Costco, or another food club, you can purchase the same amazing Greek feta cheese...not the pre-crumbled kind, but in one solid block, which stays moist, and you can dice it, or crumble it yourself. For a 2.65lb. of Greek Feta Cheese, I paid a little over $10. ...prepared 3 different kinds of dishes with it, and I still have enough to use for a beautiful Greek salad. So actually, you have enough for 4 different kinds of things to use it in...which is about $2.50 pr each dish, that serves up to 6 to 8 servings. What a fabulous DEAL!

So now, I would like to let you in on a "little secret" that I wasn't going to mention...but then again, I'm back in the same situation as in my last mention on my blog, about the "posting".
Although, I do have a GUEST POST ready for my dear friend, Ping @ Ping'sPickings, which I successfully have made just about a day or two before I had this accident on both hands that will be preventing me from blogging....(sure, sure, excuses, excuses! LOL)


Some of you, who doesn't know about my beautiful kitty named Prince, is nearly 20 years old now...we're just calculating the age from the time my daughter Lora found him at her doorstep crying, about 17, or 18 yrs ago at her apartment door (close to her college she was attending) He was left behind by the previous owner still with the tag on his neck...owner moved, and I think Prince just did not want to leave his premises. Apparently he was well known in the area by the people, and the neighborhood cats that were all his buddies, hanging around the plush Key West style area at the N. area of the Palm Beaches.

The photo on the right...Prince from 1998, when I adopted him from Lora, since she was living in Italy at the time. He is a pure breed Main Coon...tall, about 11 lbs, with gorgeous shimmering soft white-and-black hair, and bushy long tails. The most handsome male cat you've ever seen. So sweet, and gentle, as well.

Well, I announced a few month ago that I may have to have Prince put down because he is wasting away...he is now, about 4 lbs...has thyroid problems, has glaucoma, almost deaf, but still as sweet as he always has been...still remembering the 7:00 wake up call for me, to jump on my bed to remind me...still jumping up on the sofa by the living room window...I don't know how he recognizes my footsteps but he knows I'm coming upstairs...still eating...and a LOT! every 2, 3 hrs wanting to eat again, so now I just give him the same leftovers in a clean dish, and he finishes it!

I cannot make this awful decision to put him down YET, when he is still alert, sweet, and caring...but two days ago, something terribly went wrong. Since he does not groom himself, I clean his hair with "handy wipes" wet disposable towels, and brush his hair but not as often because he get snarls, and his skin is sensitive.

I will not prolong...although, I'm still hesitating to tell you that my sweet Prince bit both of my hands which at the time I didn't make much of it, just cleaned it up, and put a band aid on it. That was TWO days ago.

I do understand no-one likes to have their hair pulled, "you'd be mad too," is what my attending nurse said! Poor Prince freaked out...while in my lap, he snapped at my left hand, leaving two puncture marks over, and under my left thumb (can't bend my thumb;ouch)....I did get the snag out of his hair, and when I put him down, he freaked out even more, and bit my upper right hand, quite deep, and tore the skin to almost two inches...looks like a #7  nasty infected scar now!...the worst part is, that both my hands been inflamed, and swollen...getting better now with strong antibiotic, and antibiotic heavy cream!
Wouldn't you know, when it happened, all I said..."Prince, that wasn't nice"...last year at this time, almost to the exact day is when I sprained my ankle, and now this!
Instead of worrying about my hand at the time, I asked Dr. Eric to look at Prince...and again, he suggested to put him down...I'm in such a dilemma...Prince is his sweet self again...as he has always been, calm, and nice...fighting to stay alive!

So, I will be resting, taking my antibiotic (which makes me drowsy)...will try to comment on your blogs, but will not be posting for now...no cooking, or baking, but will be enjoying all your mouthwatering and delicious foods, and amazing desserts you post!

My daughter Lora @ CakeDuchess offered to  do a Guest Post for me this weekend, and I may be "knocking" on your food blog door to ask if you could do a guest post for me!

Easy Frittata with Vegetables and Bacon...also an Award!

I'm not trying to cover up, or making excuses for not posting a fabulous dessert...my favorite quote..."it is what it is"..."what you see is what you get"...well, it holds true. I'm quite a frugal person, but that does not mean I'm "cheap" I like to get good quality produce, small amount of meats, seafood, and the freshest and best eggs possible.
 I have been buying the 18 carton Egg-Land's Best at Costco's and I always have more than enough. I don't bake enough, and I don't eat enough eggs, so when I have a lot left over, I end up making a frittata on top of the stove, and finish it off in the oven, to melt and brown the top with the cheese on it, but this time I didn't have any cheese...but did still have the organic bacon, so I cooked that separately, to sprinkle on the top. Leftover eggs are always nice hard boiled too, to make egg salad with it.
You probably also didn't know...which some of the 7 things about me, is that I love iced tea better than hot tea. The only time I drink hot tea, when the temperature drops below 65 degrees F. outside! Strange, but true! Also, I love Lipton fresh brewed tea. I literally make a pitcher of fresh tea for iced tea, which both my son and I love. He comes over to my place, at lunch time (works from home)...runs on the beach, and when he returns. he practically drinks the entire pitcher of ice tea with fresh lemon slices, and sweetened with "blue agave" syrup. So that's my little secret with the iced tea!
What you see on the forefront on the left, is little chunks of cooked potato, and little diced pieces of zucchini,
chopped onions, peppers, and diced fresh tomatoes, and beautiful sliced tomatoes  from that glorious bag of fresh tomatoes that I buy for $1.00 when they have it at my favorite local produce market!



Easy Frittata with Vegetables and Bacon

In a nonstick skillet, add 2 Tbsp. extra virgin olive oil, and saute 1 medium chopped onion, 2 medium potatoes diced small,1 zucchini diced small, 1 green pepper diced. When vegetables are almost tender, add 1 chopped tomato. Add salt and pepper, and cook until all the veggies are nice and fairly tender.
At this point, you can continue, or put into a plastic container, and save for the next day to continue the frittata.

You can cook up the bacon ahead of time, as well.
Cook 3 or 4 slices of organic, or any other bacon of your choice till crisp. On a double folded paper towel, let the bacon absorb the grease, when cool, you can place it in a small baggie, and refrigerate it.







You can proceed to warm the vegetables the next day, or proceed to continue after everything is cooked, on the same day.









Beat 8 large eggs lightly, chop the cooked bacon coarsely, or you can eliminate it, since the eggs are being cooked without the bacon.









Pour the eggs into the skillet, on top of the vegetables. Let it cook for a minute or two without disturbing it, and gently pull a little with a spatula to let the eggs set, but do not scramble it.








When the frittata is done, you could see the edges nicely set and the rest of the eggs are still moist, no runny parts, it is done, and ready to be served.
Add chopped bacon separately on top on each serving, or serve plain.







At this time you can reheat the cooked bacon in the toaster oven, or regula oven and toast your bread; actually on bake, at 350 degrees F. till  bacon heats up and gets crispy, and bread gets nice and golden.








Just look at the nice solid portion you can serve, not falling apart. Yields, 4 servings.










Scatter the bite size pieces over the top, yumm, nice and crispy, and enjoy!

Blogging is not an easy task, and I don't mean that you are not "computer savvy"...it's just that when you prepare a post, as in foods, it is quite a project to cook, or bake, photograph it properly, and post the recipe, and also prepare a new post. It takes time, and energy, and to promote it. Makes no difference how many posts you do in a week, they all take up hours of your time.

Farm Fresh Eggs...or Egg-Land's Best!

If in doubt...as to make a perfect omelet...simple or filled with your favorite vegetable, ham, or bacon, mine is just a simple sliced sweet onion omelet, for 2 servings, with 4 eggs. Farm fresh eggs?...Well, daughter Lora, her friend, Lauren and her 3 girls, and my grandchildren Gabby and Luca went on a real egg farm...or correctly, chicken farm, to get fresh eggs! To be perfectly honest, Egg-Land's Best is fresh farm eggs. There is no doubt in my mind that they are the best, as far as I'm concerned, and that goes for my family. I want nothing, but the best for them!

I sauteed thick sliced sweet onion, which I love so much, in 2 Tbsp olive oil, and just added salt and pepper right into the skillet, over the onions for more intense flavor.








Scramble the 4 eggs lightly, and just pour over the sauteed...actually caramelized onions. Do not stir, just lift the pan from side to side, and jiggle the eggs, so they spread evenly. With a spatula, you can lift the bottom around the edge a little, after a few minutes.





At this point, you can flip it over to the other side, and just fold over, as it's shown in the top photo!

I'm also a fan of Egg-Land's Best on Foodbuzz, and have been cooking and baking with it for a few years now. Every time my daughter and I go to Costco, we buy the 18 carton of these beautiful eggs. I prefer the Extra Large eggs, although there's not too much between the two sizes.
These are the farm fresh eggs that my daughter purchased, all different colors...price? Triple the cost for the dozen farm fresh eggs, compared to a dozen Egg-Land's Best! Mind you...I did not eat even one egg...just wanted them to enjoy it, but come to think of it, I did take one or two from Lora, and it's still in the carton.

I would like to thank all of you for your kind and caring comments and mostly for your advice for helping ease the pain.
This happened to me last Tuesday, and it has gotten worst after a few days. Not fun, having a pinched nerve, anywhere on your body. I am so glad to have read about some of your similar problems, and thanking you for sharing your experiences with me. Finally, after my most amazing chiropractor, Dr Keith, who is also a Physical Therapist as well, and travels around the globe treating sport stars! Also, I had a massage on the shoulder which did help, but the most therapy that helped was stripping the knot with a gadget (that was so very painful but really helped)...he even suggested that I get it x-rayed and see and orthopedic doctor, but by Saturday, I was starting to be able to actually lift my arm slowly! Now, it is so much better, and I'm getting the use of my right arm back!
Still have not cooked or baked anything, accept my simple easy omelet, and I thought I would share the photos of the egg farm with you. It was so much fun for the kids, and a nice little morning outing on Saturday!

OK that part we did...12 miles from West Palm Beach, near my old stomping grounds neighborhood from where I moved 3 years ago. This small hidden section, is still part of the old country living, and right around the corner is the highway, if you just peek around the corner from this little ranch you will hear, and see the traffic.
There goes the gang...Lola, with the scarf on the right...her older sister Sydney in front of her, grandson Luca in the turquoise shorts, Whitney, twin sister of Lola, and Gabby in orange baseball cap, leading the way...getting ready for new adventures!
Here they spot a Goat...a Billy Goat?...don't know if she gives milk. I remember when I was a kid growing up, I used to drink fresh goat milk...being allergic to cow's milk! Now, you can buy it at the grocery supermarket, expensive, but well worth it!
Now here's a team of chicken, being led by the rooster...eggs can't be too far away!
No! This turkey is not being fattened up for Thanksgiving! She is a "token" old bird...as you can see the long ripply neck...all saggy and wrinkle. From now on you get the idea when someone refers to a "turkey neck"...you wouldn't want to let yourself go, to have one!

You can buy fresh cream, fresh butter...just don't ask the price!...My daughter bought 1 dozen eggs, 1 pound of butter, and fresh cream...3 items for $50. Cash only! Not too shabby for the owners...with a line of people buying the same. Only open 1 day a week!

Perhaps this is the chicken that laid the "golden egg?"...Sydney, (Gabby's BFF since they were babies) got the chance to hold a chicken...you actually have to catch it, to pick it up!
